Keto Zucchini Gratin

Ingredients:
- 3 medium zucchinis (thinly sliced)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated parmesan cheese
- 2 cloves garlic (minced)
- 2 tablespoons butter
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional, for a little spice)
Instructions:
- Prep the oven:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish with butter. - Sauté the garlic:
In a small pan, melt butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Remove from heat. - Make the cream mixture:
In a bowl, mix together the heavy cream, sautéed garlic, Italian seasoning, salt, pepper, and half of the cheddar cheese. - Layer the zucchini:
Place a layer of zucchini slices in the baking dish. Pour a little of the cream mixture over it. Repeat layers until all zucchini and cream mixture are used up. - Top it off:
Sprinkle the remaining cheddar cheese and all of the parmesan cheese evenly on top. Add a pinch of red pepper flakes if you like a bit of heat. - Bake:
Cover the dish loosely with foil and bake for 20 minutes. Then remove the foil and bake for another 10–15 minutes until the top is golden brown and bubbly. - Rest and serve:
Let it sit for 5–10 minutes before serving so it sets nicely.
Tip:
You can add cooked bacon bits, sautéed mushrooms, or spinach between the layers for extra flavor!
