Keto Zucchini Gratin

Ingredients:

  • 3 medium zucchinis (thinly sliced)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic (minced)
  • 2 tablespoons butter
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for a little spice)

Instructions:

  1. Prep the oven:
    Preheat your oven to 375°F (190°C). Lightly grease a baking dish with butter.
  2. Sauté the garlic:
    In a small pan, melt butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Remove from heat.
  3. Make the cream mixture:
    In a bowl, mix together the heavy cream, sautéed garlic, Italian seasoning, salt, pepper, and half of the cheddar cheese.
  4. Layer the zucchini:
    Place a layer of zucchini slices in the baking dish. Pour a little of the cream mixture over it. Repeat layers until all zucchini and cream mixture are used up.
  5. Top it off:
    Sprinkle the remaining cheddar cheese and all of the parmesan cheese evenly on top. Add a pinch of red pepper flakes if you like a bit of heat.
  6. Bake:
    Cover the dish loosely with foil and bake for 20 minutes. Then remove the foil and bake for another 10–15 minutes until the top is golden brown and bubbly.
  7. Rest and serve:
    Let it sit for 5–10 minutes before serving so it sets nicely.

Tip:
You can add cooked bacon bits, sautéed mushrooms, or spinach between the layers for extra flavor!
