Keto Zucchini Fritters

Ingredients:
- 2 medium zucchinis, grated
- 1/4 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil or avocado oil (for frying)
Instructions:
- Prepare the Zucchini:
- Grate the zucchinis using a box grater and place the shreds in a clean kitchen towel.
- Squeeze out as much moisture as possible. This step is essential to ensure crispy fritters.
- Mix the Batter:
- In a mixing bowl, combine the grated zucchini, almond flour, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly combined.
- Shape the Fritters:
- Scoop about 2 tablespoons of the mixture and shape it into a small patty. Repeat with the remaining mixture.
- Cook the Fritters:
- Heat olive oil or avocado oil in a non-stick skillet over medium heat.
- Place the fritters in the skillet, leaving space between each one.
- Cook for 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to prevent burning.
- Serve:
- Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb excess oil.
- Serve warm with sour cream, a dollop of Greek yogurt, or your favorite keto-friendly dipping sauce.
