Keto Zucchini Fritters

Ingredients:

  • 2 medium zucchinis, grated
  • 1/4 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil or avocado oil (for frying)

Instructions:

  1. Prepare the Zucchini:
    • Grate the zucchinis using a box grater and place the shreds in a clean kitchen towel.
    • Squeeze out as much moisture as possible. This step is essential to ensure crispy fritters.
  2. Mix the Batter:
    • In a mixing bowl, combine the grated zucchini, almond flour, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly combined.
  3. Shape the Fritters:
    • Scoop about 2 tablespoons of the mixture and shape it into a small patty. Repeat with the remaining mixture.
  4. Cook the Fritters:
    • Heat olive oil or avocado oil in a non-stick skillet over medium heat.
    • Place the fritters in the skillet, leaving space between each one.
    • Cook for 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to prevent burning.
  5. Serve:
    • Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb excess oil.
    • Serve warm with sour cream, a dollop of Greek yogurt, or your favorite keto-friendly dipping sauce.
