Keto Watermelon Pizza

Ingredients

For the Watermelon Base:

  • 1 small seedless watermelon (about 8-10 inches in diameter)
  • 1/4 cup unsweetened Greek yogurt or coconut yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon erythritol or another keto-friendly sweetener (optional)

For the Toppings:

  • Fresh berries (such as strawberries, blueberries, raspberries)
  • Sliced kiwis
  • Sliced almonds or chopped nuts
  • Fresh mint leaves
  • Sugar-free dark chocolate shavings or cocoa nibs (optional)

Instructions

  1. Prepare the Watermelon Base:
    • Cut the watermelon into 1/2-inch thick slices.
    • Using a round or oval cookie cutter, cut out individual pizza-sized rounds from the watermelon slices. Alternatively, you can simply cut the watermelon into wedges.
  2. Make the Yogurt Sauce:
    • In a bowl, mix the Greek yogurt with lemon juice and erythritol (if using). This will act as your “pizza sauce.”
  3. Assemble the Pizza:
    • Spread a layer of the yogurt sauce over each watermelon slice.
    • Top with fresh berries, sliced kiwi, and chopped nuts. You can also sprinkle on some dark chocolate shavings or cocoa nibs if you like.
  4. Garnish and Serve:
    • Garnish with fresh mint leaves for an extra touch of freshness.
    • Serve immediately, and enjoy your keto-friendly watermelon pizza!
