Keto Veggie Soup

Ingredients:

  • 2 tbsp olive oil or butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 small zucchini, chopped
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1 cup chopped spinach or kale
  • 1 small bell pepper, chopped
  • 1 stalk celery, chopped
  • 4 cups chicken or vegetable broth (low sodium)
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt & black pepper to taste
  • Optional: 1 tbsp tomato paste (adds flavor & color, small carbs)

🔥 Instructions:

  1. Sauté the aromatics:
    In a large pot, heat olive oil over medium heat. Add chopped onion and garlic. Sauté until fragrant and soft (about 2–3 minutes).
  2. Add veggies:
    Toss in zucchini, cauliflower, broccoli, bell pepper, and celery. Stir-fry for 5 minutes to lightly soften.
  3. Add broth and seasoning:
    Pour in broth. Add Italian seasoning, paprika, salt, and pepper. If using, mix in tomato paste.
  4. Simmer:
    Bring to a boil, then reduce heat and let it simmer for 15–20 minutes until veggies are tender.
  5. Finish with greens:
    Add spinach or kale and simmer for another 3–5 minutes until wilted.
  6. Serve hot and enjoy a bowl of nourishing keto comfort!

🥄 Optional Add-Ins:

  • Shredded chicken or cooked ground beef for protein boost
  • A dollop of sour cream or grated cheese on top
  • A splash of heavy cream for a creamy version
