KETO TACO SOUP

ngredients:

  • 1 lb ground beef or turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes (no sugar added)
  • 1 can (4 oz) diced green chilies
  • 1 cup beef or chicken broth (low sodium)
  • 1 cup water
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional for topping)
  • 1/4 cup sour cream (optional for topping)
  • Fresh cilantro, chopped (optional for garnish)
  • Lime wedges (optional for garnish)

Instructions:

  1. Cook the Meat: In a large pot or Dutch oven, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
  2. Add Vegetables: Add the chopped onion, minced garlic, and bell pepper to the pot. Cook until the vegetables are softened, about 5 minutes.
  3. Add Liquids and Spices: Stir in the diced tomatoes, diced green chilies, beef or chicken broth, and water. Add the chili powder, cumin, paprika, oregano, garlic powder, onion powder, salt, and pepper. Stir to combine.
  4. Simmer: Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, allowing the flavors to meld together.
  5. Adjust Seasoning: Taste the soup and adjust the seasoning if necessary.
  6. Serve: Ladle the soup into bowls. If desired, top with shredded cheddar cheese, a dollop of sour cream, chopped cilantro, and a squeeze of lime juice.
