Keto Taco Pie

Ingredients:

  • 1 lb (450g) ground beef
  • 1 tbsp olive oil
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning (low-carb)
  • 1/2 cup diced tomatoes (or Rotel, drained)
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1 cup shredded cheese (cheddar, mozzarella, or Mexican blend)
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Optional Toppings:

  • Sour cream
  • Sliced avocado
  • Chopped cilantro
  • Jalapeños
  • Salsa

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
  2. Cook the beef: Heat olive oil in a skillet, add onion and garlic, and sauté for 2 minutes. Add ground beef and cook until browned. Drain excess grease.
  3. Season it up: Stir in taco seasoning and diced tomatoes. Let simmer for 2 minutes, then remove from heat.
  4. Prepare the egg mixture: In a bowl, whisk eggs, heavy cream, salt, and pepper.
  5. Assemble the pie: Spread the beef mixture evenly in the greased pie dish. Pour the egg mixture over it, then top with shredded cheese.
  6. Bake for 25-30 minutes or until the top is golden and the center is set.
  7. Cool for a few minutes, then slice and serve with your favorite toppings
