Keto Taco Pie

Ingredients:
- 1 lb (450g) ground beef
- 1 tbsp olive oil
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 2 tbsp taco seasoning (low-carb)
- 1/2 cup diced tomatoes (or Rotel, drained)
- 4 large eggs
- 1/2 cup heavy cream
- 1 cup shredded cheese (cheddar, mozzarella, or Mexican blend)
- 1/2 tsp salt
- 1/2 tsp black pepper
Optional Toppings:
- Sour cream
- Sliced avocado
- Chopped cilantro
- Jalapeños
- Salsa
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
- Cook the beef: Heat olive oil in a skillet, add onion and garlic, and sauté for 2 minutes. Add ground beef and cook until browned. Drain excess grease.
- Season it up: Stir in taco seasoning and diced tomatoes. Let simmer for 2 minutes, then remove from heat.
- Prepare the egg mixture: In a bowl, whisk eggs, heavy cream, salt, and pepper.
- Assemble the pie: Spread the beef mixture evenly in the greased pie dish. Pour the egg mixture over it, then top with shredded cheese.
- Bake for 25-30 minutes or until the top is golden and the center is set.
- Cool for a few minutes, then slice and serve with your favorite toppings
