Keto Sweetened Condensed Milk Bread
Ingredients
For the bread:
- 1 1/2 cups almond flour
- 1/2 cup coconut flour
- 1/4 cup psyllium husk powder
- 1/4 cup baking powder
- 1/2 teaspoon salt
- 1/4 cup granulated erythritol or other keto sweetener
- 1/2 cup keto sweetened condensed milk (recipe below)
- 1/2 cup unsweetened almond milk or coconut milk
- 4 large eggs
- 1/4 cup melted butter or coconut oil
- 1 teaspoon vanilla extract

- 1/2 cup heavy cream
- 1/4 cup granulated erythritol or other keto sweetener
- 1 tablespoon butter
- 1/4 teaspoon vanilla extract

Instructions
1. Prepare the keto sweetened condensed milk:
- In a small saucepan, combine the heavy cream, sweetener, and butter.
- Cook over medium heat, stirring frequently, until the mixture reduces by about half and thickens, about 10-15 minutes.
- Remove from heat and stir in the vanilla extract.
- Let it cool before using. It will thicken further as it cools.
2. Preheat your oven:
- Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
3. Prepare the bread batter:
- In a large bowl, whisk together the almond flour, coconut flour, psyllium husk powder, baking powder, salt, and sweetener.
- In a separate bowl, mix the eggs, melted butter or coconut oil, almond milk, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until well combined.
- Gently fold in the keto sweetened condensed milk.
4. Bake the bread:
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
5. Cool and serve:
- Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Slice and enjoy!
