Keto Sweetened Condensed Milk Bread

Ingredients:

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup keto sweetened condensed milk (store-bought or homemade)
  • 4 large eggs
  • 1/4 cup melted butter or coconut oil
  • 1/4 cup unsweetened almond milk (or any low-carb milk of choice)
  • 1/4 cup erythritol or your preferred keto sweetener (optional, depending on how sweet you like it)
  • 1 tablespoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the almond flour, coconut flour, erythritol (if using), baking powder, and salt.
  3. In another bowl, whisk together the eggs, melted butter or coconut oil, unsweetened almond milk, keto sweetened condensed milk, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  7. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Tips:

  • For a bit of extra flavor, you can add a teaspoon of cinnamon or a handful of chopped nuts or berries to the batter.
  • Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
