KETO SUPREME PIZZA STUFFED PEPPERS
Ingredients:
- 4 large bell peppers (any color)
- 1 lb (450g) ground sausage (Italian or your choice)
- 1/2 lb (225g) ground beef
- 1 cup (100g) shredded mozzarella cheese
- 1/2 cup (50g) grated Parmesan cheese
- 1/2 cup (75g) pepperoni slices, cut into small pieces
- 1/2 cup (75g) sliced black olives
- 1/2 cup (75g) diced tomatoes (canned or fresh, drained)
- 1/2 cup (75g) diced onions
- 1 clove garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1/2 cup (125ml) pizza sauce (low-carb or homemade, optional)
- Fresh basil for garnish (optional)

Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Prepare Peppers:
- Cut the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottoms slightly so they stand upright.
- Cook Meat Mixture:
- In a large skillet, heat olive oil over medium heat.
- Add the ground sausage and ground beef. Cook until browned, breaking it up with a spoon as it cooks.
- Add the minced garlic, diced onions, oregano, basil, salt, and pepper. Cook for another 2-3 minutes until the onions are softened.
- Combine Ingredients:
- Stir in the diced tomatoes, black olives, and pepperoni pieces. Cook for another 2 minutes.
- Remove the skillet from heat and mix in 1/2 cup of shredded mozzarella cheese and 1/4 cup of grated Parmesan cheese.
- Stuff Peppers:
- Place the bell peppers in a baking dish.
- Spoon the meat mixture evenly into each pepper, pressing down lightly.
- Top each stuffed pepper with additional shredded mozzarella cheese and a sprinkle of grated Parmesan.
- Bake:
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.
- Serve:
- Let the peppers cool for a few minutes before serving.
- Garnish with fresh basil if desired.
Tips:
- Low-Carb Pizza Sauce: If you want extra pizza flavor, you can drizzle a bit of low-carb pizza sauce over the peppers before baking.
- Vegetable Additions: Feel free to add other low-carb veggies to the meat mixture, like mushrooms or spinach, if you like.
