Ingredients:

  • 1/2 teaspoon baking powder
  • A pinch of salt

Instructions:

  1. Prepare the Strawberry Filling:
    1. Preheat your oven to 350°F (175°C).
    2. In a medium saucepan, combine the sliced strawberries, granulated erythritol, lemon juice, and vanilla extract.
    3. Cook over medium heat, stirring occasionally, until the strawberries begin to release their juices and the mixture starts to bubble.
    4. Stir in the chia seeds and cook for an additional 2-3 minutes until the mixture thickens. Remove from heat and set aside.
  2. Prepare the Cream Cheese Topping:
    1. In a medium bowl, beat the softened cream cheese with an electric mixer until smooth.
    2. Add the powdered erythritol and beat until combined.
    3. Beat in the egg and vanilla extract until smooth.
    4. Gradually mix in the almond flour, baking powder, and salt until fully incorporated.
  3. Assemble the Cobbler:
    1. Pour the strawberry filling into a baking dish (an 8×8 inch dish works well).
    2. Spoon dollops of the cream cheese topping over the strawberry filling. It doesn’t need to cover completely; leaving some gaps will give a more cobbler-like texture.
  4. Bake:
    1. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and set, and the filling is bubbling.
    2. Remove from the oven and let it cool slightly before serving.
  5. Serve:
