Keto Soft Lemon Cookies

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup granulated erythritol or other keto-friendly sweetener
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/4 cup lemon juice (about 1 lemon)
  • 1 tablespoon lemon zest (about 1 lemon)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, and salt.
  3. Cream Wet Ingredients: In a large bowl, use an electric mixer to cream the softened butter until smooth. Add the egg and mix well.
  4. Add Lemon Flavor: Add the lemon juice, lemon zest, and vanilla extract (if using) to the butter mixture and mix until well combined.
  5. Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  6. Shape Cookies: Using a cookie scoop or a tablespoon, drop dough onto the prepared baking sheet. Flatten the cookies slightly with the back of the scoop or spoon, as they don’t spread much during baking.
  7. Bake: Bake for 10-12 minutes, or until the edges are lightly golden. The cookies will still be soft when you remove them from the oven but will firm up as they cool.
  8. Cool: Let the cookies cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.
  9. Optional Glaze: For an extra touch, you can make a keto lemon glaze by mixing a small amount of powdered erythritol with a bit of lemon juice until you reach your desired consistency. Drizzle over cooled cookies.

  • Butter Temperature: Make sure the butter is softened but not melted for the best texture.
  • Storage: Store the cookies in an airtight container at room temperature for up to a week, or refrigerate for longer freshness.
