Keto Snickers Brownies

Ingredients:

For the Brownies:

  • 1 cup almond flour
  • 1/4 cup cocoa powder
  • 1/2 cup erythritol (or sweetener of choice)
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened almond milk (or coconut milk)

For the Caramel Layer:

  • 1/4 cup unsweetened peanut butter (smooth or crunchy)
  • 1/4 cup heavy cream
  • 2 tbsp butter
  • 1/4 cup erythritol (or preferred sweetener)
  • 1 tsp vanilla extract
  • Pinch of salt

For the Snickers Topping:

  • 1/2 cup peanuts (roasted and salted)
  • 1/4 cup sugar-free chocolate chips

Instructions:

  1. Prepare the Brownies:
    • Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
    • In a bowl, whisk together almond flour, cocoa powder, erythritol, baking powder, and salt.
    • In another bowl, whisk together eggs, melted butter, vanilla extract, and almond milk.
    • Combine the wet and dry ingredients and mix until smooth.
    • Pour the brownie batter into the prepared pan and spread it out evenly.
    • Bake for 20-25 minutes or until a toothpick inserted comes out clean.
    • Let the brownies cool completely.
  2. Make the Caramel Layer:
    • In a small saucepan, melt together peanut butter, heavy cream, butter, erythritol, vanilla, and salt over medium heat.
    • Stir until the mixture thickens and is smooth (about 5 minutes).
    • Once thickened, remove from heat and allow it to cool slightly.
  3. Assemble the Snickers Brownies:
    • Once the brownies are fully cooled, spread the caramel mixture over the top.
    • Sprinkle roasted peanuts evenly over the caramel layer.
    • Melt the sugar-free chocolate chips and drizzle over the peanuts.
  4. Chill & Serve:
    • Refrigerate the brownies for at least 1 hour to allow the caramel to set and the chocolate to harden.
    • Cut into squares and enjoy your Keto Snickers Brownies!
