Keto Skinny Creamy Broccoli Salad Recipe
Ingredients:
- 4 cups fresh broccoli florets, chopped
- 1/2 cup red onion, finely chopped
- 1/2 cup sharp cheddar cheese, shredded
- 1/4 cup sunflower seeds
- 1/2 cup cooked and crumbled bacon (optional)
- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon apple cider vinegar
- 1 tablespoon lemon juice
- 1 tablespoon erythritol (or your preferred keto-friendly sweetener)
- Salt and pepper to taste
Instructions:
- Prepare the Broccoli:
- Wash and chop the broccoli into small florets. You can also include some of the stems if you like.
- Mix the Salad Ingredients:
- In a large bowl, combine the chopped broccoli, red onion, shredded cheddar cheese, sunflower seeds, and crumbled bacon (if using).
- Make the Dressing:
- In a separate bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, lemon juice, erythritol, salt, and pepper until smooth.
