Keto Skinny Creamy Broccoli Salad Recipe

Ingredients:

  • 4 cups fresh broccoli florets, chopped
  • 1/2 cup red onion, finely chopped
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/4 cup sunflower seeds
  • 1/2 cup cooked and crumbled bacon (optional)
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon erythritol (or your preferred keto-friendly sweetener)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Broccoli:
    • Wash and chop the broccoli into small florets. You can also include some of the stems if you like.
  2. Mix the Salad Ingredients:
    • In a large bowl, combine the chopped broccoli, red onion, shredded cheddar cheese, sunflower seeds, and crumbled bacon (if using).
