Keto Shrimp cocktail
Ingredients:
- 1 lb large shrimp (peeled and deveined, tail on or off, as per preference)
- 4 cups water
- 1 lemon (cut into halves)
- 2 cloves garlic (crushed)
- 1-2 bay leaves
- 1 tsp Old Bay seasoning or any seasoning mix of choice
- 1/4 tsp sea salt
- Ice (for chilling the shrimp)
For the cocktail sauce:
- 1/2 cup sugar-free ketchup
- 1-2 tbsp horseradish (adjust to your heat preference)
- 1 tbsp lemon juice
- 1-2 tsp Worcestershire sauce
- Salt and pepper to taste
Instructions:
- Cook the shrimp:
- In a large pot, bring water to a boil with lemon halves, garlic, bay leaves, Old Bay seasoning, and salt.
- Add the shrimp and cook for 2-3 minutes, until they turn pink and opaque.
- Remove shrimp from the pot and transfer them into a bowl of ice water to stop the cooking process.
- Once chilled, drain the shrimp and refrigerate until ready to serve.
- Prepare the cocktail sauce:
- In a bowl, mix together the sugar-free ketchup, horseradish, lemon juice, Worcestershire sauce, salt, and pepper. Adjust the seasoning as per your taste.
- Serve:
- Arrange the chilled shrimp on a platter or in individual glasses. Serve with the cocktail sauce on the side for dipping.
