Keto Shrimp cocktail

Ingredients:

  • 1 lb large shrimp (peeled and deveined, tail on or off, as per preference)
  • 4 cups water
  • 1 lemon (cut into halves)
  • 2 cloves garlic (crushed)
  • 1-2 bay leaves
  • 1 tsp Old Bay seasoning or any seasoning mix of choice
  • 1/4 tsp sea salt
  • Ice (for chilling the shrimp)

For the cocktail sauce:

  • 1/2 cup sugar-free ketchup
  • 1-2 tbsp horseradish (adjust to your heat preference)
  • 1 tbsp lemon juice
  • 1-2 tsp Worcestershire sauce
  • Salt and pepper to taste

Instructions:

  1. Cook the shrimp:
    • In a large pot, bring water to a boil with lemon halves, garlic, bay leaves, Old Bay seasoning, and salt.
    • Add the shrimp and cook for 2-3 minutes, until they turn pink and opaque.
    • Remove shrimp from the pot and transfer them into a bowl of ice water to stop the cooking process.
    • Once chilled, drain the shrimp and refrigerate until ready to serve.
  2. Prepare the cocktail sauce:
    • In a bowl, mix together the sugar-free ketchup, horseradish, lemon juice, Worcestershire sauce, salt, and pepper. Adjust the seasoning as per your taste.
  3. Serve:
    • Arrange the chilled shrimp on a platter or in individual glasses. Serve with the cocktail sauce on the side for dipping.
