1 lb large shrimp (peeled and deveined, tail on or off, as per preference)
4 cups water
1 lemon (cut into halves)
2 cloves garlic (crushed)
1-2 bay leaves
1 tsp Old Bay seasoning or any seasoning mix of choice
1/4 tsp sea salt
Ice (for chilling the shrimp)
For the cocktail sauce:
1/2 cup sugar-free ketchup
1-2 tbsp horseradish (adjust to your heat preference)
1 tbsp lemon juice
1-2 tsp Worcestershire sauce
Salt and pepper to taste
Instructions:
Cook the shrimp:
In a large pot, bring water to a boil with lemon halves, garlic, bay leaves, Old Bay seasoning, and salt.
Add the shrimp and cook for 2-3 minutes, until they turn pink and opaque.
Remove shrimp from the pot and transfer them into a bowl of ice water to stop the cooking process.
Once chilled, drain the shrimp and refrigerate until ready to serve.
Prepare the cocktail sauce:
In a bowl, mix together the sugar-free ketchup, horseradish, lemon juice, Worcestershire sauce, salt, and pepper. Adjust the seasoning as per your taste.
Serve:
Arrange the chilled shrimp on a platter or in individual glasses. Serve with the cocktail sauce on the side for dipping.
