Keto Seven-layer Salad

Ingredients:

  • For the Salad:
    • 2 cups Romaine lettuce, chopped
    • 1 cup cooked and crumbled bacon (about 6-8 strips)
    • 1 cup shredded cheddar cheese
    • 1/2 cup cucumber, diced
    • 1/2 cup cherry tomatoes, halved
    • 1/2 cup red onion, finely chopped
    • 1/2 cup hard-boiled eggs, chopped
  • For the Dressing:
    • 1/2 cup mayonnaise (preferably full-fat)
    • 2 tbsp sour cream
    • 1 tbsp Dijon mustard
    • 1 tbsp apple cider vinegar
    • Salt and pepper to taste

Instructions:

  1. Prepare the Salad:
    • Start by layering the ingredients in a large clear glass bowl or dish for a beautiful presentation. Begin with the chopped Romaine lettuce as the first layer.
    • Next, add a layer of diced cucumber, followed by the chopped tomatoes, red onion, and crumbled bacon. Add the hard-boiled eggs on top.
    • Sprinkle the shredded cheddar cheese evenly over the top layer.
  2. Make the Dressing:
    • In a small bowl, whisk together mayonnaise, sour cream, Dijon mustard, and apple cider vinegar. Season with salt and pepper to taste.
  3. Assemble the Salad:
    • Spread the dressing evenly over the top of the salad. You can also reserve some dressing for serving if you prefer.
    • Cover the salad with plastic wrap and refrigerate for at least an hour before serving to allow the flavors to meld.
  4. Serve:
    • When ready to serve, gently toss the salad and enjoy! It’s a crunchy, creamy, and filling keto-friendly meal.
