Keto Seven-layer Salad

Ingredients

  1. Salad Base
    • 4 cups of romaine or iceberg lettuce, chopped
    • 1 cup of cherry tomatoes, halved
    • 1 cup of cucumber, diced
    • 1/2 cup of green bell pepper, diced
    • 1/2 cup of red onion, diced
    • 1 cup of shredded cheddar cheese
    • 6 slices of cooked bacon, crumbled
    • 3 hard-boiled eggs, sliced or chopped
  2. Dressing
    • 1 cup mayonnaise (preferably sugar-free)
    • 1/2 cup sour cream
    • 1-2 tbsp apple cider vinegar or lemon juice
    • 1 tsp garlic powder
    • Salt and pepper, to taste

Instructions

  1. Layer the Salad
    In a large glass or trifle bowl, layer the ingredients in the following order:
    • Lettuce
    • Cucumber
    • Cherry tomatoes
    • Green bell pepper
    • Red onion
    • Hard-boiled eggs
    • Cheddar cheese
  2. Prepare the Dressing
    In a small mixing bowl, whisk together mayonnaise, sour cream, apple cider vinegar or lemon juice, garlic powder, salt, and pepper until smooth.
  3. Assemble the Salad
    Spread the dressing evenly over the top of the layered salad. Smooth it out with a spatula to cover all the layers.
  4. Add the Final Toppings
    Sprinkle the crumbled bacon on top of the dressing layer.
  5. Chill
    Cover the salad and refrigerate for at least 1 hour to let the flavors meld together.
  6. Serve
    Serve chilled and enjoy!
