1 pound (450g) ground pork sausage (or any sausage of your choice, ensuring it’s low-carb)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried thyme (optional)
Salt and pepper to taste
Instructions:
Prepare the dough:
In a large bowl, combine the almond flour, coconut flour, psyllium husk powder, baking powder, and salt.
Add the eggs, melted butter, and mozzarella cheese. Mix until it forms a dough.
If the dough is too sticky, add a little more almond flour until it’s easy to handle.
Prepare the sausage filling:
In a bowl, mix the ground sausage with garlic powder, onion powder, thyme (if using), salt, and pepper. You can adjust the seasoning to your taste.
Form the sausage rolls:
Preheat your oven to 375°F (190°C).
Roll out the dough on a sheet of parchment paper into a rectangular shape (about 1/4 inch thick).
Cut the dough into strips wide enough to wrap around the sausage filling.
Place a line of sausage along the center of each strip of dough, then roll it up tightly, sealing the edges.
Bake the sausage rolls:
Place the rolls on a baking tray lined with parchment paper, making sure they’re spaced apart.
Brush the tops of the rolls with a bit of melted butter or egg wash for a golden finish.
Bake for 20-25 minutes or until golden brown and crispy on top.
Serve:
Let the sausage rolls cool slightly before serving. They are delicious on their own or paired with a low-carb dipping sauce like mustard or sugar-free ketchup.
