KETO SAUSAGE ROLLS

Ingredients:

  • For the dough:
    • 2 cups almond flour
    • 1/4 cup coconut flour
    • 1/4 cup psyllium husk powder
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 2 large eggs
    • 1/2 cup melted butter or coconut oil
    • 1/4 cup grated mozzarella cheese
  • For the filling:
    • 1 pound (450g) ground pork sausage (or any sausage of your choice, ensuring it’s low-carb)
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon onion powder
    • 1/4 teaspoon dried thyme (optional)
    • Salt and pepper to taste

Instructions:

  1. Prepare the dough:
    • In a large bowl, combine the almond flour, coconut flour, psyllium husk powder, baking powder, and salt.
    • Add the eggs, melted butter, and mozzarella cheese. Mix until it forms a dough.
    • If the dough is too sticky, add a little more almond flour until it’s easy to handle.
  2. Prepare the sausage filling:
    • In a bowl, mix the ground sausage with garlic powder, onion powder, thyme (if using), salt, and pepper. You can adjust the seasoning to your taste.
  3. Form the sausage rolls:
    • Preheat your oven to 375°F (190°C).
    • Roll out the dough on a sheet of parchment paper into a rectangular shape (about 1/4 inch thick).
    • Cut the dough into strips wide enough to wrap around the sausage filling.
    • Place a line of sausage along the center of each strip of dough, then roll it up tightly, sealing the edges.
  4. Bake the sausage rolls:
    • Place the rolls on a baking tray lined with parchment paper, making sure they’re spaced apart.
    • Brush the tops of the rolls with a bit of melted butter or egg wash for a golden finish.
    • Bake for 20-25 minutes or until golden brown and crispy on top.
  5. Serve:
    • Let the sausage rolls cool slightly before serving. They are delicious on their own or paired with a low-carb dipping sauce like mustard or sugar-free ketchup.
