KETO SAUSAGE ROLL

Ingredients:

For the Dough:

  • 1 ½ cups (150g) almond flour
  • ¼ cup (30g) coconut flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ cup (60g) unsalted butter, melted
  • 1 large egg
  • 1 cup (120g) shredded mozzarella cheese
  • 1 tbsp cream cheese

For the Filling:

  • 1 lb (450g) ground sausage (make sure it’s low-carb or make your own)
  • ½ tsp dried sage
  • ½ tsp dried thyme
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • Salt and pepper to taste

Instructions:

  1. Prepare the Dough:
    1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
    2. In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt.
    3. Add the melted butter and egg. Mix well.
    4. In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring each time until fully melted and combined.
    5. Fold the melted cheese mixture into the dry ingredients until you have a smooth dough.
  2. Prepare the Filling:
    1. In a bowl, mix the ground sausage with dried sage, thyme, garlic powder, onion powder, salt, and pepper. Mix until evenly combined.
  3. Assemble the Sausage Rolls:
    1. Roll out the dough between two sheets of parchment paper into a rectangle about ¼ inch thick.
    2. Spread the sausage mixture evenly over the dough, leaving a small border around the edges.
    3. Carefully roll the dough up into a log shape, using the parchment paper to help you.
    4. Slice the log into 1-inch pieces and place them on the prepared baking sheet.
  4. Bake:
    1. Bake in the preheated oven for 15-20 minutes or until the sausage rolls are golden brown and the sausage is cooked through.
    2. Remove from the oven and let cool slightly before serving.

Tips:

  • You can use any type of low-carb sausage or seasoned ground meat you like.
  • For extra flavor, you can brush the tops of the sausage rolls with a beaten egg before baking to get a nice golden color.
  • Store leftover sausage rolls in an airtight container in the fridge for up to 4 days or freeze them for longer storage.
