KETO SAUSAGE ROLL
Ingredients:
For the Dough:
- 1 ½ cups (150g) almond flour
- ¼ cup (30g) coconut flour
- 1 tsp baking powder
- ¼ tsp salt
- ¼ cup (60g) unsalted butter, melted
- 1 large egg
- 1 cup (120g) shredded mozzarella cheese
- 1 tbsp cream cheese
For the Filling:
- 1 lb (450g) ground sausage (make sure it’s low-carb or make your own)
- ½ tsp dried sage
- ½ tsp dried thyme
- ½ tsp garlic powder
- ¼ tsp onion powder
- Salt and pepper to taste

Instructions:
- Prepare the Dough:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt.
- Add the melted butter and egg. Mix well.
- In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring each time until fully melted and combined.
- Fold the melted cheese mixture into the dry ingredients until you have a smooth dough.
- Prepare the Filling:
- In a bowl, mix the ground sausage with dried sage, thyme, garlic powder, onion powder, salt, and pepper. Mix until evenly combined.
- Assemble the Sausage Rolls:
- Roll out the dough between two sheets of parchment paper into a rectangle about ¼ inch thick.
- Spread the sausage mixture evenly over the dough, leaving a small border around the edges.
- Carefully roll the dough up into a log shape, using the parchment paper to help you.
- Slice the log into 1-inch pieces and place them on the prepared baking sheet.
- Bake:
- Bake in the preheated oven for 15-20 minutes or until the sausage rolls are golden brown and the sausage is cooked through.
- Remove from the oven and let cool slightly before serving.
Tips:
- You can use any type of low-carb sausage or seasoned ground meat you like.
- For extra flavor, you can brush the tops of the sausage rolls with a beaten egg before baking to get a nice golden color.
- Store leftover sausage rolls in an airtight container in the fridge for up to 4 days or freeze them for longer storage.
