Keto Sausage Cheese Scones

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder (optional, for extra flavor)
  • 1/4 tsp onion powder (optional)
  • 1/2 cup shredded cheddar cheese (or your preferred cheese)
  • 1/2 cup cooked sausage crumbles (you can use pork, turkey, or chicken sausage)
  • 2 large eggs
  • 1/4 cup unsweetened almond milk (or any keto-friendly milk)
  • 1/4 cup melted butter
  • 1/2 tsp dried Italian herbs (optional)
  • 1/4 tsp black pepper (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or use a silicone baking mat.
  2. Cook the sausage: In a pan over medium heat, cook the sausage until browned, breaking it up into small pieces. Drain any excess grease and set it aside to cool.
  3. Mix the dry ingredients: In a large bowl, combine the almond flour, coconut flour, baking powder, salt, garlic powder, onion powder, and Italian herbs. Stir until evenly mixed.
  4. Add cheese and sausage: To the dry ingredients, add the shredded cheddar cheese and the cooked sausage crumbles. Stir to combine.
  5. Whisk the wet ingredients: In a separate bowl, whisk together the eggs, almond milk, and melted butter.
  6. Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and mix until a dough forms. The dough should be a bit thick but not too dry. If it feels too sticky, you can add a bit more almond flour to help with shaping.
  7. Shape the scones: Use your hands or a spoon to scoop out the dough and form 8-10 small round scones on the prepared baking sheet. You can gently flatten them into rounds or keep them slightly taller if you prefer more of a biscuit shape.
  8. Bake: Bake for 18-20 minutes or until the scones are golden brown on top and cooked through.
  9. Cool and serve: Let the scones cool for a few minutes before serving. Enjoy them warm as a snack, breakfast, or side dish!

Optional Add-ins:

  • Herbs: Add fresh or dried rosemary, thyme, or sage for more flavor.
  • Spices: A dash of paprika or red pepper flakes can add a little heat.
