Keto Reuben in a Bowl

Ingredients:
- 1 lb corned beef, cooked and sliced
- 2 cups sauerkraut, drained
- 1 cup Swiss cheese, shredded
- 1/2 cup Russian dressing (keto-friendly, recipe below)
- 2 tbsp butter
- 1 tsp caraway seeds (optional)
- 1 cup dill pickles, chopped
Keto-Friendly Russian Dressing:
- 1/2 cup mayonnaise
- 2 tbsp sugar-free ketchup
- 1 tbsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 tsp lemon juice
- 1/4 tsp paprika
- Salt and pepper, to taste
Instructions:
- Prepare the Dressing:
- In a small bowl, whisk together mayonnaise, sugar-free ketchup, Dijon mustard, Worcestershire sauce, lemon juice, and paprika.
- Season with salt and pepper to taste. Set aside.
- Cook the Corned Beef:
- If your corned beef isn’t pre-cooked, cook it according to package instructions or your preferred method. Once cooked, slice it into thin strips.
- Sauté the Sauerkraut:
- In a large skillet, melt the butter over medium heat.
- Add the drained sauerkraut and caraway seeds (if using) to the skillet.
- Sauté for 5-7 minutes until the sauerkraut is heated through and slightly browned.
- Assemble the Bowl:
- Divide the sautéed sauerkraut among serving bowls.
- Top each bowl with a portion of the sliced corned beef.
- Sprinkle the shredded Swiss cheese over the top.
- Drizzle with the keto-friendly Russian dressing.
- Garnish with chopped dill pickles.
- Serve:
- Serve the Reuben bowls warm, and enjoy!
