Keto Red Velvet Fat Bombs

Ingredients:

  • 4 oz (115g) cream cheese, softened
  • 4 oz (115g) unsalted butter, softened
  • 1/2 cup almond flour
  • 1/4 cup powdered erythritol (or any keto sweetener)
  • 2 tbsp cocoa powder (unsweetened)
  • 1 tsp vanilla extract
  • 1/2 tsp apple cider vinegar (for that red velvet tang)
  • Red food coloring (keto-friendly) — few drops
  • Pinch of salt

Optional Coating:

  • Shredded coconut or crushed freeze-dried strawberries (unsweetened)

Instructions:

  1. In a mixing bowl, beat the softened cream cheese and butter together until smooth and fluffy.
  2. Add almond flour, erythritol, cocoa powder, vanilla extract, apple cider vinegar, and a pinch of salt. Mix well.
  3. Add a few drops of red food coloring until you get your desired shade of “red velvet.”
  4. Place the mixture in the fridge for about 20–30 minutes to firm up a bit.
  5. Once chilled, scoop out small portions and roll them into balls.
  6. If you like, roll them in shredded coconut or crushed strawberries for an extra fancy touch!
  7. Store the fat bombs in an airtight container in the fridge (they stay good for about a week).

Tip:
They taste even better after chilling overnight. So if you can resist, wait!
