Keto Red Velvet Fat Bombs

Ingredients:
- 4 oz (115g) cream cheese, softened
- 4 oz (115g) unsalted butter, softened
- 1/2 cup almond flour
- 1/4 cup powdered erythritol (or any keto sweetener)
- 2 tbsp cocoa powder (unsweetened)
- 1 tsp vanilla extract
- 1/2 tsp apple cider vinegar (for that red velvet tang)
- Red food coloring (keto-friendly) — few drops
- Pinch of salt
Optional Coating:
- Shredded coconut or crushed freeze-dried strawberries (unsweetened)
Instructions:
- In a mixing bowl, beat the softened cream cheese and butter together until smooth and fluffy.
- Add almond flour, erythritol, cocoa powder, vanilla extract, apple cider vinegar, and a pinch of salt. Mix well.
- Add a few drops of red food coloring until you get your desired shade of “red velvet.”
- Place the mixture in the fridge for about 20–30 minutes to firm up a bit.
- Once chilled, scoop out small portions and roll them into balls.
- If you like, roll them in shredded coconut or crushed strawberries for an extra fancy touch!
- Store the fat bombs in an airtight container in the fridge (they stay good for about a week).
Tip:
They taste even better after chilling overnight. So if you can resist, wait!
