Keto Potato Salad

Ingredients:

  • 1 medium head cauliflower (cut into bite-size florets)
  • 2 boiled eggs (chopped)
  • ¼ cup diced celery
  • ¼ cup diced pickles (or relish, unsweetened)
  • 2 tbsp chopped red onion (optional)
  • ½ cup mayonnaise
  • 1 tbsp yellow mustard
  • 1 tsp apple cider vinegar
  • Salt & black pepper to taste
  • Paprika (for garnish)
  • Fresh parsley or dill (optional, for garnish)

Instructions:

  1. Steam the cauliflower until just tender (about 5-6 minutes). Don’t overcook! Then drain and let it cool completely.
  2. In a large bowl, mix together mayo, mustard, vinegar, salt, and pepper to make the dressing.
  3. Add the cooled cauliflower, chopped eggs, celery, pickles, and onion (if using).
  4. Gently toss until everything is coated well in the dressing.
  5. Taste and adjust seasoning if needed.
  6. Chill in the fridge for at least 1 hour (it gets even better the longer it sits).
  7. Sprinkle with paprika and herbs before serving!

🌟 Tips:

  • You can add chopped cooked bacon for extra flavor and protein.
  • If you like it creamier, add a bit more mayo or a spoon of sour cream.
