Keto Potato Salad

Ingredients:
- 1 medium head cauliflower (cut into bite-size florets)
- 2 boiled eggs (chopped)
- ¼ cup diced celery
- ¼ cup diced pickles (or relish, unsweetened)
- 2 tbsp chopped red onion (optional)
- ½ cup mayonnaise
- 1 tbsp yellow mustard
- 1 tsp apple cider vinegar
- Salt & black pepper to taste
- Paprika (for garnish)
- Fresh parsley or dill (optional, for garnish)
Instructions:
- Steam the cauliflower until just tender (about 5-6 minutes). Don’t overcook! Then drain and let it cool completely.
- In a large bowl, mix together mayo, mustard, vinegar, salt, and pepper to make the dressing.
- Add the cooled cauliflower, chopped eggs, celery, pickles, and onion (if using).
- Gently toss until everything is coated well in the dressing.
- Taste and adjust seasoning if needed.
- Chill in the fridge for at least 1 hour (it gets even better the longer it sits).
- Sprinkle with paprika and herbs before serving!
🌟 Tips:
- You can add chopped cooked bacon for extra flavor and protein.
- If you like it creamier, add a bit more mayo or a spoon of sour cream.
