Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal later.
- Make the Crust:
- In a medium bowl, combine the almond flour, sweetener, melted butter, and salt. Mix until the mixture is well combined and crumbly.
- Press the mixture evenly into the bottom of the prepared baking pan.
- Bake for 10-12 minutes or until lightly golden. Remove from the oven and set aside.
- Prepare the Filling:
- In a medium saucepan, melt the butter over medium heat.
- Add the sweetener to the melted butter and stir until dissolved.
- Remove from heat and let it cool slightly.
- Whisk in the eggs one at a time, then stir in the syrup, vanilla extract, and salt until well combined.
- Fold in the chopped pecans.
- Assemble the Bars:
- Pour the pecan filling over the pre-baked crust, spreading it out evenly.
- Bake for 20-25 minutes, or until the filling is set and the edges are slightly golden. The center should be slightly jiggly but will firm up as it cools.
- Cool and Slice:
- Allow the bars to cool completely in the pan on a wire rack. The cooling time will help the bars firm up and be easier to cut.
- Once cool, lift the bars out of the pan using the parchment paper overhang, and cut into squares.
- Serve and Store:
- Enjoy your keto pecan pie bars! They can be stored in an airtight container at room temperature for a few days or in the refrigerator for up to a week. They also freeze well if you want to keep them for a longer period.
These bars offer a sweet and nutty treat that fits perfectly into a keto diet, giving you the rich flavor of pecan pie with fewer carbs. Enjoy!
