Ingredients:

  • 2 large eggs
  • 1/4 cup sugar-free maple syrup or keto-friendly syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal later.
  2. Make the Crust:
    • In a medium bowl, combine the almond flour, sweetener, melted butter, and salt. Mix until the mixture is well combined and crumbly.
    • Press the mixture evenly into the bottom of the prepared baking pan.
    • Bake for 10-12 minutes or until lightly golden. Remove from the oven and set aside.
  3. Prepare the Filling:
    • In a medium saucepan, melt the butter over medium heat.
    • Add the sweetener to the melted butter and stir until dissolved.
    • Remove from heat and let it cool slightly.
    • Whisk in the eggs one at a time, then stir in the syrup, vanilla extract, and salt until well combined.
    • Fold in the chopped pecans.
  4. Assemble the Bars:
    • Pour the pecan filling over the pre-baked crust, spreading it out evenly.
    • Bake for 20-25 minutes, or until the filling is set and the edges are slightly golden. The center should be slightly jiggly but will firm up as it cools.
  5. Cool and Slice:
    • Allow the bars to cool completely in the pan on a wire rack. The cooling time will help the bars firm up and be easier to cut.
    • Once cool, lift the bars out of the pan using the parchment paper overhang, and cut into squares.
  6. Serve and Store:
