Keto Onion Rings
Ingredients:
- 1 large onion
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1 cup pork rinds, crushed (for extra crunch, optional)
- Cooking oil (e.g., avocado oil) for frying

Instructions:
- Prepare the Onion:
- Peel and slice the onion into 1/2-inch rings. Carefully separate the rings from each other and set aside.
- Prepare the Breading:
- In a shallow bowl, combine the almond flour, Parmesan cheese, paprika, garlic powder, onion powder, oregano, salt, and black pepper.
- In another bowl, beat the eggs.
- Bread the Onion Rings:
- Dip each onion ring into the beaten eggs, allowing excess to drip off.
- Coat the onion ring with the almond flour mixture, pressing gently to adhere. For extra crunch, you can also coat the rings with crushed pork rinds before the almond flour mixture.
- Fry the Onion Rings:
- Heat about 1/4 inch of oil in a large skillet over medium heat.
- Once the oil is hot (but not smoking), carefully add the onion rings in batches. Do not overcrowd the skillet.
- Fry the onion rings for about 2-3 minutes per side or until golden brown and crispy.
- Use a slotted spoon to transfer the rings to a plate lined with paper towels to drain excess oil.
- Serve:
