Keto Onion Chicken Casserole

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 large onion, thinly sliced
  • 2 cups shredded mozzarella cheese
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the chicken:
    • Season the chicken breasts with salt, pepper, thyme, and oregano.
  3. Cook the chicken:
    • In a large skillet, heat the olive oil and butter over medium-high heat.
    • Add the chicken breasts and cook until golden brown on both sides (about 4-5 minutes per side). Remove the chicken and set aside.
  4. Prepare the onions:
    • In the same skillet, add the sliced onions and cook until they are soft and caramelized (about 10 minutes).
    • Add the minced garlic and cook for an additional 1-2 minutes.
  5. Make the sauce:
    • Add the heavy cream and chicken broth to the skillet with the onions and garlic. Stir well to combine.
    • Let the mixture simmer for about 5 minutes until it thickens slightly.
    • Stir in the grated Parmesan cheese.
  6. Assemble the casserole:
    • Place the cooked chicken breasts in a baking dish.
    • Pour the creamy onion sauce over the chicken.
    • Top with shredded mozzarella cheese.
  7. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Garnish and serve:
    • Garnish with chopped fresh parsley before serving.
