Keto Onion Chicken Casserole

Ingredients:
- 4 boneless, skinless chicken breasts
- 1 large onion, thinly sliced
- 2 cups shredded mozzarella cheese
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the oven to 375°F (190°C).
- Prepare the chicken:
- Season the chicken breasts with salt, pepper, thyme, and oregano.
- Cook the chicken:
- In a large skillet, heat the olive oil and butter over medium-high heat.
- Add the chicken breasts and cook until golden brown on both sides (about 4-5 minutes per side). Remove the chicken and set aside.
- Prepare the onions:
- In the same skillet, add the sliced onions and cook until they are soft and caramelized (about 10 minutes).
- Add the minced garlic and cook for an additional 1-2 minutes.
- Make the sauce:
- Add the heavy cream and chicken broth to the skillet with the onions and garlic. Stir well to combine.
- Let the mixture simmer for about 5 minutes until it thickens slightly.
- Stir in the grated Parmesan cheese.
- Assemble the casserole:
- Place the cooked chicken breasts in a baking dish.
- Pour the creamy onion sauce over the chicken.
- Top with shredded mozzarella cheese.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish and serve:
- Garnish with chopped fresh parsley before serving.
