Keto Mug Pancakes

Ingredients:

  • 1 tbsp almond flour
  • 1 tbsp coconut flour
  • 1 egg
  • 1 tbsp melted butter (plus a little for greasing)
  • 1 tbsp unsweetened almond milk (or any low-carb milk)
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Optional: 1 tsp erythritol or monk fruit (if you like it sweet)

Instructions:

  1. Lightly grease a microwave-safe mug with butter or oil.
  2. Add all ingredients to the mug and mix well until smooth.
  3. Microwave for 60–90 seconds, depending on your microwave’s strength.
  4. Let it cool for a few seconds, then flip out or eat straight from the mug.
  5. Top with sugar-free syrup, a pat of butter, or fresh berries if desired!
