Keto Mug Pancakes

Ingredients:
- 1 tbsp almond flour
- 1 tbsp coconut flour
- 1 egg
- 1 tbsp melted butter (plus a little for greasing)
- 1 tbsp unsweetened almond milk (or any low-carb milk)
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- Pinch of salt
- Optional: 1 tsp erythritol or monk fruit (if you like it sweet)
Instructions:
- Lightly grease a microwave-safe mug with butter or oil.
- Add all ingredients to the mug and mix well until smooth.
- Microwave for 60–90 seconds, depending on your microwave’s strength.
- Let it cool for a few seconds, then flip out or eat straight from the mug.
- Top with sugar-free syrup, a pat of butter, or fresh berries if desired!
