Keto Meatloaf Recipe
Ingredients:
- 1 ½ lbs ground beef (preferably 80/20)
- ½ lb ground pork
- 1 cup almond flour
- 1 cup shredded cheddar cheese
- 2 large eggs
- ¼ cup heavy cream
- ½ cup finely chopped onion
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- ½ cup sugar-free ketchup (for topping)
Instructions:
- Preheat your oven: to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- Mix the ingredients: In a large bowl, combine the ground beef, ground pork, almond flour, shredded cheddar cheese, eggs, heavy cream, chopped onion, minced garlic, Worcestershire sauce, parsley, oregano, thyme, smoked paprika, salt, and pepper. Mix until well combined.
- Shape the meatloaf: Transfer the mixture to the prepared baking sheet or loaf pan and shape it into a loaf.
- Add the topping: Spread the sugar-free ketchup evenly over the top of the meatloaf.
- Bake: Place the meatloaf in the preheated oven and bake for 60-70 minutes, or until the internal temperature reaches 160°F (71°C).
- Rest and serve: Allow the meatloaf to rest for 10 minutes before slicing and serving.
