Keto Meatball Boats

Ingredients

For the Meatballs:

  • 1 lb ground beef (or ground turkey)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1 large egg
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

For the Boats:

  • 4 medium zucchini
  • 1 cup marinara sauce (sugar-free)
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the meatballs:
    • In a large bowl, combine the ground beef, Parmesan cheese, almond flour, egg, onion, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
    • Shape the mixture into small meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
  3. Bake the meatballs:
    • Bake in the preheated oven for 15-20 minutes, or until the meatballs are cooked through and slightly browned.
  4. Prepare the zucchini boats:
    • While the meatballs are baking, cut the zucchini in half lengthwise and scoop out the center seeds to create a boat shape.
    • Place the zucchini halves in a baking dish.
  5. Assemble the boats:
    • Once the meatballs are done, place 3-4 meatballs into each zucchini half.
    • Pour marinara sauce over the meatballs in the zucchini boats.
    • Sprinkle shredded mozzarella cheese on top.
  6. Bake the zucchini boats:
    • Cover the baking dish with aluminum foil and bake for 20 minutes.
    • Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    • Garnish with fresh basil or parsley and serve hot.
