Keto/Low Carb Big Mac Salad

Ingredients:

For the Salad:

  • 1 lb ground beef
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced pickles
  • 1/4 cup sliced red onions (optional)
  • 1/4 cup crumbled bacon (optional)

For the Big Mac Dressing:

  • 1/2 cup mayonnaise
  • 2 tbsp sugar-free ketchup
  • 1 tbsp yellow mustard
  • 2 tbsp pickle relish (sugar-free)
  • 1 tbsp white vinegar
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions:

  1. Prepare the Ground Beef:
    • In a large skillet, cook the ground beef over medium heat until it’s fully browned, breaking it apart with a spoon as it cooks.
    • Season the beef with salt, black pepper, onion powder, and garlic powder. Mix well.
    • Once cooked, drain any excess fat and set aside.
  2. Make the Big Mac Dressing:
    • In a small mixing bowl, combine the mayonnaise, sugar-free ketchup, yellow mustard, pickle relish, white vinegar, onion powder, garlic powder, and paprika.
    • Mix until well combined. Season with salt and pepper to taste.
  3. Assemble the Salad:
    • In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, shredded cheddar cheese, diced pickles, and sliced red onions.
    • Add the cooked ground beef to the salad.
    • Drizzle the Big Mac dressing over the top and toss everything together until well mixed.
  4. Optional Toppings:
    • For extra flavor, you can sprinkle crumbled bacon on top of the salad.
  5. Serve:
