Keto/Low Carb Big Mac Salad
Ingredients:
For the Salad:
- 1 lb ground beef
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 4 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced pickles
- 1/4 cup sliced red onions (optional)
- 1/4 cup crumbled bacon (optional)
For the Big Mac Dressing:
- 1/2 cup mayonnaise
- 2 tbsp sugar-free ketchup
- 1 tbsp yellow mustard
- 2 tbsp pickle relish (sugar-free)
- 1 tbsp white vinegar
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions:
- Prepare the Ground Beef:
- In a large skillet, cook the ground beef over medium heat until it’s fully browned, breaking it apart with a spoon as it cooks.
- Season the beef with salt, black pepper, onion powder, and garlic powder. Mix well.
- Once cooked, drain any excess fat and set aside.
- Make the Big Mac Dressing:
- In a small mixing bowl, combine the mayonnaise, sugar-free ketchup, yellow mustard, pickle relish, white vinegar, onion powder, garlic powder, and paprika.
- Mix until well combined. Season with salt and pepper to taste.
- Assemble the Salad:
- In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, shredded cheddar cheese, diced pickles, and sliced red onions.
- Add the cooked ground beef to the salad.
- Drizzle the Big Mac dressing over the top and toss everything together until well mixed.
- Optional Toppings:
- For extra flavor, you can sprinkle crumbled bacon on top of the salad.
- Serve:
