Keto Lemon Dessert Recipe

Ingredients:
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup sweetener (e.g., erythritol or monk fruit)
- 1/4 cup butter (melted)
- 2 large eggs
- 1/4 cup heavy cream
- 1/4 cup lemon juice (freshly squeezed)
- Zest from 1 lemon
- 1 tsp vanilla extract
- 1/4 tsp baking powder
- Pinch of salt
- Optional: Fresh whipped cream or a dusting of powdered sweetener for topping
Instructions:
- Preheat the oven to 350°F (175°C) and grease a small baking dish or line it with parchment paper.
- Mix dry ingredients: In a bowl, whisk together the almond flour, coconut flour, sweetener, baking powder, and salt.
- Mix wet ingredients: In another bowl, whisk the eggs, melted butter, heavy cream, lemon juice, lemon zest, and vanilla extract until smooth.
- Combine: Add the wet ingredients to the dry ingredients and stir until well combined.
- Bake: Pour the batter into the prepared baking dish and bake for 20-25 minutes or until golden and a toothpick comes out clean.
- Cool: Allow the dessert to cool for 10-15 minutes before serving.
