Keto Lemon Dessert Recipe

Ingredients:

  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup sweetener (e.g., erythritol or monk fruit)
  • 1/4 cup butter (melted)
  • 2 large eggs
  • 1/4 cup heavy cream
  • 1/4 cup lemon juice (freshly squeezed)
  • Zest from 1 lemon
  • 1 tsp vanilla extract
  • 1/4 tsp baking powder
  • Pinch of salt
  • Optional: Fresh whipped cream or a dusting of powdered sweetener for topping

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a small baking dish or line it with parchment paper.
  2. Mix dry ingredients: In a bowl, whisk together the almond flour, coconut flour, sweetener, baking powder, and salt.
  3. Mix wet ingredients: In another bowl, whisk the eggs, melted butter, heavy cream, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Combine: Add the wet ingredients to the dry ingredients and stir until well combined.
  5. Bake: Pour the batter into the prepared baking dish and bake for 20-25 minutes or until golden and a toothpick comes out clean.
  6. Cool: Allow the dessert to cool for 10-15 minutes before serving.
  7. Serve: Optionally, top with whipped cream or a light dusting of powdered sweetener. Enjoy!
