Keto Key Lime Pound Cake with Cream Cheese Icing

Ingredients

For the Pound Cake:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened whey protein isolate (for structure)
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup granulated erythritol or monk fruit sweetener
  • 1/2 cup unsalted butter, softened
  • 4 large eggs, room temperature
  • 1/3 cup unsweetened almond milk
  • 2 tbsp freshly squeezed lime juice (key lime preferred)
  • 1 tbsp lime zest
  • 1 tsp vanilla extract
  • 1/2 tsp lime extract (optional, for extra lime flavor)

For the Cream Cheese Icing:

  • 4 oz cream cheese, softened
  • 1/4 cup powdered erythritol
  • 2 tbsp heavy cream
  • 1 tsp lime juice
  • 1/2 tsp lime zest (optional, for garnish)

Instructions

  1. Preheat and Prepare:
    • Preheat your oven to 350°F (175°C).
    • Grease a loaf pan (8×4 inches) and line it with parchment paper for easy removal.
  2. Mix Dry Ingredients:
    • In a medium bowl, whisk together almond flour, coconut flour, whey protein isolate, baking powder, and salt. Set aside.
  3. Cream Butter and Sweetener:
    • In a large bowl, use a hand mixer to cream the butter and granulated sweetener until light and fluffy (about 2-3 minutes).
  4. Add Wet Ingredients:
    • Beat in eggs, one at a time, until fully incorporated.
    • Mix in almond milk, lime juice, lime zest, vanilla extract, and lime extract (if using).
  5. Combine Dry and Wet Ingredients:
    • Gradually add the dry ingredients to the wet mixture. Mix until a thick, smooth batter forms.
  6. Bake the Cake:
    • Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
    • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover it loosely with foil after 30 minutes.
    • Let the cake cool completely in the pan before removing.
  7. Prepare the Cream Cheese Icing:
    • In a medium bowl, beat the cream cheese and powdered sweetener until smooth.
    • Add heavy cream and lime juice, and mix until the icing is creamy and spreadable.
  8. Assemble and Garnish:
    • Spread the cream cheese icing over the cooled pound cake.
    • Sprinkle lime zest on top for a fresh pop of color and flavor.
