Keto Key Lime Pound Cake with Cream Cheese Icing

Ingredients
For the Pound Cake:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup unsweetened whey protein isolate (for structure)
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup granulated erythritol or monk fruit sweetener
- 1/2 cup unsalted butter, softened
- 4 large eggs, room temperature
- 1/3 cup unsweetened almond milk
- 2 tbsp freshly squeezed lime juice (key lime preferred)
- 1 tbsp lime zest
- 1 tsp vanilla extract
- 1/2 tsp lime extract (optional, for extra lime flavor)
For the Cream Cheese Icing:
- 4 oz cream cheese, softened
- 1/4 cup powdered erythritol
- 2 tbsp heavy cream
- 1 tsp lime juice
- 1/2 tsp lime zest (optional, for garnish)
Instructions
- Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Grease a loaf pan (8×4 inches) and line it with parchment paper for easy removal.
- Mix Dry Ingredients:
- In a medium bowl, whisk together almond flour, coconut flour, whey protein isolate, baking powder, and salt. Set aside.
- Cream Butter and Sweetener:
- In a large bowl, use a hand mixer to cream the butter and granulated sweetener until light and fluffy (about 2-3 minutes).
- Add Wet Ingredients:
- Beat in eggs, one at a time, until fully incorporated.
- Mix in almond milk, lime juice, lime zest, vanilla extract, and lime extract (if using).
- Combine Dry and Wet Ingredients:
- Gradually add the dry ingredients to the wet mixture. Mix until a thick, smooth batter forms.
- Bake the Cake:
- Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover it loosely with foil after 30 minutes.
- Let the cake cool completely in the pan before removing.
- Prepare the Cream Cheese Icing:
- In a medium bowl, beat the cream cheese and powdered sweetener until smooth.
- Add heavy cream and lime juice, and mix until the icing is creamy and spreadable.
- Assemble and Garnish:
- Spread the cream cheese icing over the cooled pound cake.
- Sprinkle lime zest on top for a fresh pop of color and flavor.
