Ingredients:
For the Jelly Layer:
- 1 cup water
- 1 cup unsweetened fruit juice (like cranberry or raspberry, or use water with a few drops of lemon or lime juice for flavor)
- 1/4 cup powdered erythritol or your preferred keto-friendly sweetener (adjust to taste)
- 2 tablespoons gelatin powder (unflavored)
For the Cream Layer (optional):
- 1 cup heavy cream
- 2 tablespoons powdered erythritol or your preferred keto-friendly sweetener
- 1 teaspoon vanilla extract

Instructions:
- Prepare the Jelly Layer:
- In a saucepan, heat 1 cup of water until it’s warm but not boiling.
- Stir in the gelatin powder until fully dissolved. This should take about 2-3 minutes.
- Add the fruit juice and erythritol to the saucepan, stirring until well combined and the sweetener is dissolved.
- Pour the mixture into a baking dish or silicone mold.
- Chill in the refrigerator for at least 2 hours or until the jelly is fully set.
- Prepare the Cream Layer (if using):
- In a mixing bowl, whip the heavy cream with an electric mixer until it starts to thicken.
- Add the erythritol and vanilla extract, then continue to whip until stiff peaks form.
- Once the jelly layer is set, gently spread or pipe the whipped cream over the jelly layer.
- Return to the refrigerator and chill for an additional hour to let the cream set.
- Serve:
- Cut into squares or slices and serve chilled. Store any leftovers in the refrigerator.
