KETO JALAPEÑO POPPER CHICKEN CASSEROLE

Ingredients:

  • 2 cups cooked chicken, shredded or cubed (you can use rotisserie chicken for convenience)
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2-3 jalapeños, diced (seeds removed if you prefer less heat)
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh cilantro or parsley (optional, for garnish)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare Chicken:
    • If you haven’t already, shred or cube the cooked chicken.
  3. Mix Ingredients:
    • In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, grated Parmesan cheese, mayonnaise, and sour cream. Stir until well combined.
    • Add the diced jalapeños, minced garlic, smoked paprika, onion powder, garlic powder, salt, and pepper. Mix until everything is evenly distributed.
  4. Combine:
    • Gently fold the shredded chicken into the mixture, making sure it is well coated with the creamy cheese mixture.
  5. Transfer to Baking Dish:
    • Pour the mixture into a greased 9×13-inch baking dish or a similarly sized casserole dish.
  6. Bake:
    • Spread the mixture evenly in the dish and bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly, and the casserole is heated through.
  7. Garnish (Optional):
    • Once out of the oven, garnish with chopped fresh cilantro or parsley if desired.
  8. Serve:

Tips:

  • Adjust the Heat: If you prefer a milder flavor, you can reduce the number of jalapeños or remove the seeds.
