Ingredients:
- 1/2 cup peanut butter (sugar-free, creamy)
- 1/4 cup coconut flour
- 2 tbsp powdered erythritol (or preferred keto sweetener)
- 1/2 tsp vanilla extract
- Pinch of salt
- 1/2 cup sugar-free chocolate chips
- 1 tsp coconut oil
Instructions:
- In a bowl, mix peanut butter, coconut flour, erythritol, vanilla, and salt until a dough forms.
- Roll into small balls and place them on a tray lined with parchment paper.
- Freeze for 15-20 minutes.
- Meanwhile, melt chocolate chips with coconut oil in the microwave (30-sec bursts, stirring in between).
- Dip each ball in melted chocolate, then chill again until set.
