Ingredients:

  • 1/2 cup peanut butter (sugar-free, creamy)
  • 1/4 cup coconut flour
  • 2 tbsp powdered erythritol (or preferred keto sweetener)
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1/2 cup sugar-free chocolate chips
  • 1 tsp coconut oil

Instructions:

  1. In a bowl, mix peanut butter, coconut flour, erythritol, vanilla, and salt until a dough forms.
  2. Roll into small balls and place them on a tray lined with parchment paper.
  3. Freeze for 15-20 minutes.
  4. Meanwhile, melt chocolate chips with coconut oil in the microwave (30-sec bursts, stirring in between).
  5. Dip each ball in melted chocolate, then chill again until set.
