Keto Ham And Cheese Bites

Ingredients:

  • 1 cup diced ham (or turkey ham for a leaner option)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/2 tsp baking powder
  • 1/2 tsp garlic powder (optional)
  • 1/4 tsp black pepper
  • 1/4 tsp salt (adjust to taste)
  • 2 tbsp chopped chives or parsley (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with silicone liners.
  2. Mix Ingredients: In a bowl, whisk the eggs. Add the diced ham, shredded cheese, almond flour, baking powder, garlic powder, salt, pepper, and chives (if using). Mix until well combined.
  3. Scoop Into Muffin Tin: Spoon the mixture evenly into the mini muffin tin, filling each cup about 3/4 full.
  4. Bake: Bake in the preheated oven for 12-15 minutes, or until the bites are golden brown and set in the center.
  5. Cool and Serve: Let them cool slightly before removing them from the muffin tin. Serve warm or at room temperature.

Tips:

  • These bites can be stored in an airtight container in the fridge for up to 5 days or frozen for longer storage.
