Total Time: 7 minutes
Ingredients
For the Sandwich
2 slices keto bread (homemade or packaged, such as Thin Slims)
1 tablespoon butter
1 slice cheddar or “tasty” cheese
¼ cup mozzarella cheese, freshly grated
⅛ teaspoon flaky sea salt (for finishing)
Instructions
Step 1: Assemble the Sandwich
Lay both slices of keto bread flat.
Spread butter on one side of each slice.
On the unbuttered side of one slice, layer the sliced cheese and grated mozzarella.
Top with the second slice of bread, buttered side facing out.
Step 2: Cook the Sandwich
Heat a lightly greased non-stick skillet over medium heat.
Once hot, place the sandwich in the skillet. Cook for 2–3 minutes until the bottom is golden and crispy.
Flip and cook the other side for 2 more minutes.
Press down gently with a spatula. When cheese begins to ooze out slightly, it’s done.
Step 3: Finish and Serve
Remove from the pan and sprinkle the sandwich with flaky sea salt.
Slice in half and serve immediately.
