keto grilled cheese chaffle

Ingredients:
- 2 large eggs
- 1/2 cup shredded mozzarella cheese
- 1/4 cup almond flour
- 1/2 tsp baking powder
- 1/4 tsp garlic powder (optional)
- Butter (for grilling)
Instructions:
- Preheat the waffle maker: Turn it on and allow it to get hot. If you have a mini waffle maker, that’s perfect for this recipe.
- Make the chaffle batter: In a bowl, whisk together the eggs, shredded mozzarella, almond flour, baking powder, and garlic powder until everything is well combined.
- Cook the chaffle: Spray the waffle maker with non-stick cooking spray or lightly butter it. Pour the batter into the waffle maker, enough to cover the surface. Close the waffle maker and cook for about 2-3 minutes, or until the chaffle is golden brown and crispy.
- Prepare the grilled cheese: Once the chaffle is done, spread a thin layer of butter on one side of the chaffle. Add a slice of your favorite cheese (cheddar works great) and then place another chaffle on top to make a sandwich.
- Grill: In a hot pan, add a bit of butter and grill your chaffle sandwich for 1-2 minutes on each side, until the cheese is melted and the chaffle is crispy.
- Serve: Once the grilled cheese chaffle is golden and crispy, cut it in half and enjoy your keto-friendly grilled cheese!
Tips:
- You can use any keto-friendly cheese, like cheddar, gouda, or even cream cheese.
