1 cup shredded mozzarella cheese (or any cheese of your choice)
2 tbsp almond flour
1/4 tsp baking powder
1/4 tsp garlic powder (optional)
Butter for greasing the waffle maker and spreading on the chaffles
2 slices of cheese (cheddar, mozzarella, or your favorite keto-friendly cheese)
Instructions:
Make the Chaffle Batter:
In a bowl, beat the eggs.
Add the shredded mozzarella cheese, almond flour, baking powder, and optional garlic powder.
Mix well until the batter forms a thick consistency.
Preheat the Waffle Maker:
Preheat your waffle maker and lightly grease it with butter or non-stick spray.
Cook the Chaffles:
Spoon about 2–3 tbsp of the batter into the waffle maker, spreading it out evenly.
Close the waffle maker and cook for 3–5 minutes or until golden and crispy.
Repeat for a second chaffle.
Assemble the Grilled Cheese:
Once both chaffles are cooked, butter the outside of each one.
Place a slice of cheese between the chaffles.
Heat a skillet over medium heat and grill the sandwich for 2-3 minutes per side, pressing down gently with a spatula until the cheese is melted and the chaffles are golden brown.
Serve:
