Ingredients:

- 2 cups cooked, shredded chicken (rotisserie chicken works great)
- 1 cup cream cheese, softened
- 1 cup shredded Monterey Jack cheese
- 1 cup canned green chilies, drained
- 1/2 cup chopped fresh cilantro
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- For the Taquitos:
- 8-10 keto-friendly tortillas (such as almond flour or coconut flour tortillas)
- 1-2 tablespoons olive oil or avocado oil (for brushing)
- For Serving:
- Sour cream
- Salsa or pico de gallo
- Guacamole

Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare the Filling: In a large bowl, combine the shredded chicken, cream cheese, shredded Monterey Jack cheese, green chilies, cilantro, cumin, garlic powder, onion powder, salt, and pepper. Mix until well combined and creamy.
- Assemble the Taquitos:
- Lay out a tortilla on a flat surface. Spoon about 2-3 tablespoons of the chicken filling down the center of the tortilla.
- Roll the tortilla tightly around the filling, securing it with a toothpick if necessary.
- Repeat with the remaining tortillas and filling.
- Prepare for Baking:
- Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper or lightly greased.
- Brush the taquitos with olive oil or avocado oil to help them crisp up in the oven.
- Bake: Bake in the preheated oven for 15-20 minutes, or until the taquitos are golden brown and crispy.
- Serve: Remove from the oven and let them cool slightly. Serve with sour cream, salsa or pico de gallo, and guacamole on the side.
Tips:
- If you prefer a crunchier texture, you can also fry the taquitos in a bit of oil on the stovetop until golden brown.
- If using store-bought keto tortillas, make sure they are pliable enough to roll without cracking. Warming them slightly before assembling can help with this.
