Ingredients

  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 8 oz cream cheese, softened

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper.
  2. Prepare the Crust:
    • In a medium bowl, combine almond flour, coconut flour, erythritol, and salt.
    • Add melted butter, egg, and vanilla extract. Mix until a dough forms.
    • Press the dough evenly into the bottom of the prepared pan to form the crust.
  3. Prepare the Filling:
    • In a large bowl, beat together the softened butter and erythritol until creamy.
    • Add the eggs one at a time, beating well after each addition.
    • Mix in the softened cream cheese until smooth.
    • Add almond flour, coconut flour, vanilla extract, baking powder, and salt. Mix until fully combined.

    • Pour the filling over the crust, spreading it evenly.
    • Bake for 30-35 minutes, or until the filling is set and the top is golden brown.
    • Let the cake cool completely in the pan before slicing.
  5. Serve:
