Keto Goat Cheese Salad

Ingredients:

  • 4 cups mixed salad greens (e.g., arugula, spinach, kale)
  • 4 oz goat cheese (crumbled or sliced into small rounds)
  • 1 small cucumber (thinly sliced)
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup walnuts or pecans (toasted for extra flavor)
  • 1/4 avocado (sliced, optional for extra creaminess)

Vinaigrette:

  • 3 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar or balsamic vinegar (lower sugar, if available)
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 tsp dried thyme or fresh herbs (optional for extra flavor)

Instructions:

  1. Prepare the Salad: In a large salad bowl, add the mixed greens, cucumber slices, cherry tomato halves, and toasted nuts. Gently toss to combine.
  2. Add Goat Cheese: Crumble the goat cheese over the salad or add the rounds as you prefer. Add avocado slices if using.
  3. Make the Vinaigrette: In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, garlic powder, salt, pepper, and herbs (if using). Adjust seasonings to taste.
