Keto Goat Cheese Salad

Ingredients:
- 4 cups mixed salad greens (e.g., arugula, spinach, kale)
- 4 oz goat cheese (crumbled or sliced into small rounds)
- 1 small cucumber (thinly sliced)
- 1/2 cup cherry tomatoes (halved)
- 1/4 cup walnuts or pecans (toasted for extra flavor)
- 1/4 avocado (sliced, optional for extra creaminess)
Vinaigrette:
- 3 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar or balsamic vinegar (lower sugar, if available)
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1/4 tsp dried thyme or fresh herbs (optional for extra flavor)
Instructions:
- Prepare the Salad: In a large salad bowl, add the mixed greens, cucumber slices, cherry tomato halves, and toasted nuts. Gently toss to combine.
- Add Goat Cheese: Crumble the goat cheese over the salad or add the rounds as you prefer. Add avocado slices if using.
