Peel the jicama and cut it into fry-shaped pieces (about 1/4 inch thick).
Parboil the Jicama (Optional but recommended):

Season the Fries:

In the last 5 minutes of baking, sprinkle the grated Parmesan cheese over the fries. Return to the oven and bake until the cheese is melted and slightly crispy.

Remove from the oven and let cool for a few minutes. Garnish with fresh parsley and additional salt if desired. Serve warm.
