Keto Garlic Parmesan Jicama Fries

Ingredients
- 1 medium jicama (about 1 pound)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika (smoked or regular)
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the Oven:
- Preheat your oven to 425°F (220°C).
- Prepare the Jicama:
- Peel the jicama and cut it into fry-shaped pieces (about 1/4 inch thick).
- Parboil the Jicama (Optional but recommended):
- Bring a pot of water to a boil. Add the jicama fries and cook for about 10-15 minutes until slightly tender. Drain and let cool.
- Season the Fries:
- In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and pepper. Add the jicama fries and toss until they are well coated.
- Bake the Fries:
- Spread the jicama fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until they are golden and crispy.
- Add Parmesan:
- In the last 5 minutes of baking, sprinkle the grated Parmesan cheese over the fries. Return to the oven and bake until the cheese is melted and slightly crispy.
- Serve:
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley and additional salt if desired. Serve warm.
Tips
- For extra flavor, consider adding other seasonings such as Italian herbs or cayenne pepper.
- Serve with a low-carb dipping sauce, like ranch or garlic aioli
