Keto Garlic Bread

Ingredients:

For the Bread:

  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup almond flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the Garlic Topping:

  • 1/4 cup unsalted butter (softened)
  • 3-4 cloves garlic (minced)
  • 2 tablespoons chopped fresh parsley (or 1 tablespoon dried parsley)
  • 1/4 teaspoon salt (or to taste)
  • Optional: 1/4 teaspoon black pepper

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Bread Dough:
    • In a microwave-safe bowl, melt the shredded mozzarella cheese in the microwave. Heat in 30-second intervals, stirring in between, until fully melted and smooth.
    • In a separate bowl, combine the almond flour, grated Parmesan cheese, baking powder, and salt.
    • Add the melted mozzarella cheese to the dry ingredients and mix until well combined. Then, beat the eggs and add them to the mixture, stirring until a dough forms.
  3. Shape the Bread:
    • Transfer the dough to the prepared baking sheet. Use your hands or a spatula to shape it into a rectangle or oval shape, about 1/2 inch thick.
  4. Bake the Bread:
    • Bake in the preheated oven for 12-15 minutes, or until the bread is golden brown and cooked through.
  5. Prepare the Garlic Topping:
    • While the bread is baking, mix the softened butter, minced garlic, chopped parsley, salt, and black pepper (if using) in a small bowl.
  6. Add the Garlic Topping:
    • After the bread is done baking, remove it from the oven and spread the garlic butter mixture evenly over the top of the bread.
  7. Broil (Optional):
    • For extra crispy garlic bread, switch the oven to broil and place the bread under the broiler for an additional 1-2 minutes, or until the garlic butter is bubbly and slightly browned. Watch it closely to prevent burning.
  8. Serve:
    • Allow the garlic bread to cool slightly before slicing into pieces. Serve warm.
