Ingredients:
For the crust:
- 1 medium head of cauliflower, riced (about 4 cups)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 egg, lightly beaten
For the toppings:
- 1/2 cup sugar-free pizza sauce
- 1 cup shredded mozzarella cheese
- Toppings of your choice (pepperoni, mushrooms, bell peppers, olives, etc.)
- Fresh basil leaves (optional)
Instructions:
- Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet or pizza stone with parchment paper.
- Prepare the cauliflower:
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
- Transfer the riced cauliflower to a microwave-safe bowl and microwave on high for 4-5 minutes, until soft.
- Allow the cauliflower to cool slightly, then place it in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial for achieving a crispy crust.
- Make the crust:
- In a large bowl, combine the cauliflower, mozzarella, Parmesan, oregano, garlic powder, and salt. Add the beaten egg and mix well.
- Transfer the cauliflower mixture to the prepared baking sheet and shape it into a circle or rectangle, about 1/4 inch thick.
- Bake the crust:
- Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and crispy.
- Add the toppings:
