Keto Focaccia

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup shredded mozzarella cheese
  • 2 large eggs
  • 1/4 cup olive oil, plus extra for drizzling
  • 1/4 cup water
  • 1 tbsp chopped fresh rosemary (or 1 tsp dried rosemary)
  • 1 tbsp sea salt flakes (optional, for topping)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line an 8×8-inch baking pan or a similar-sized oven-safe dish with parchment paper.
  2. Prepare the Dry Ingredients:
    • In a large bowl, mix together almond flour, coconut flour, baking powder, and salt.
  3. Prepare the Wet Ingredients:
    • In a separate microwave-safe bowl, melt the shredded mozzarella cheese in the microwave for about 30-60 seconds until fully melted. Stir until smooth.
  4. Combine Ingredients:
    • Add the melted mozzarella to the dry ingredients and mix well.
    • Add the eggs, olive oil, and water to the mixture. Stir until the dough is well combined. It will be slightly sticky.
  5. Transfer to Pan:
    • Spread the dough evenly in the prepared baking pan. Use a spatula or the back of a spoon to smooth out the surface.
  6. Add Toppings:
    • Drizzle a little olive oil over the top of the dough.
    • Sprinkle the chopped rosemary and sea salt flakes (if using) over the dough. You can also add other toppings like sliced olives or cherry tomatoes if you prefer.
  7. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the focaccia is golden brown and firm to the touch.
  8. Cool and Slice:
    • Allow the focaccia to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
    • Once cooled, cut into squares or slices and enjoy!

Tips:

  • Cheese Texture: If you prefer a more traditional focaccia texture, you can use part cream cheese in place of some of the mozzarella, though this will change the flavor slightly.
  • Flavors: Experiment with other herbs and seasonings like garlic powder, thyme, or oregano for different flavors.
