Keto Fajita Chicken Breasts Casserole

Ingredients:
Preheat Oven and Prep Chicken:
- Preheat your oven to 375°F (190°C).Season chicken breasts with salt, pepper, and a portion of the fajita seasoning.
Cook Chicken:
- In a large skillet, heat olive oil over medium-high heat.Sear chicken breasts until golden brown on both sides, about 3-4 minutes per side. Remove from skillet and set aside.
Prepare Vegetables:
- In the same skillet, add a bit more oil if needed and sauté the sliced bell peppers, onion, and garlic until softened and slightly caramelized, about 5-6 minutes. Season with remaining fajita seasoning.
Assemble Casserole:
- Arrange the chicken breasts in a casserole dish.Top with the sautéed vegetables.
Bake:
- Sprinkle shredded cheddar cheese evenly over the chicken and vegetables.Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
Serve:
- Remove from oven and let it rest for a few minutes.Garnish with fresh cilantro before serving.
