Keto Cucumber Slices With Cream Cheese

Ingredients:

  • 1 large cucumber (preferably English cucumber)
  • 4 oz (113g) cream cheese, softened
  • 1 tablespoon fresh dill, chopped (or 1/2 tsp dried dill)
  • 1 teaspoon garlic powder (optional)
  • 1 tablespoon lemon juice (optional for tanginess)
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)
  • Everything bagel seasoning or sesame seeds (for topping, optional)

Instructions:

  1. Prepare the Cucumbers:
    • Wash and slice the cucumber into thin rounds. You can peel the cucumber if desired, but leaving the skin on adds texture and nutrients.
  2. Make the Cream Cheese Mix:
    • In a small bowl, mix the softened cream cheese, chopped dill, garlic powder, lemon juice (if using), and a pinch of salt and pepper. Stir until smooth and well combined.
  3. Assemble the Slices:
    • Spread about 1/2 teaspoon of the cream cheese mixture on each cucumber slice. You can use more or less cream cheese based on preference.
  4. Add Toppings (Optional):
    • Drizzle a little olive oil over the top for extra richness.
    • Sprinkle everything bagel seasoning or sesame seeds on top for added flavor.
  5. Serve and Enjoy:
    • Arrange the cucumber slices on a plate and serve immediately. They’re great as a quick snack or a party appetizer.

Tips:

  • You can also add smoked salmon or thinly sliced turkey for extra protein.
  • Store leftovers in an airtight container in the fridge for up to 24 hours, though they are best served fresh.
