Keto Crunch Wrap Supreme

Ingredients:

For the Tortilla:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2 tablespoons melted coconut oil or butter

For the Filling:

  • 1 lb ground beef or ground turkey
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning (make sure it’s keto-friendly or use your own mix)
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup guacamole
  • 1/4 cup salsa (optional)

Optional Additions:

  • Sliced jalapeños
  • Chopped cilantro

Instructions:

  1. Make the Tortillas:
    1. In a large bowl, combine the almond flour, coconut flour, baking powder, and salt.
    2. Add the eggs and melted coconut oil (or butter) and mix until a dough forms.
    3. Divide the dough into 4 equal portions.
    4. Roll each portion between two sheets of parchment paper into a thin, tortilla-sized circle.
    5. Heat a non-stick skillet over medium heat. Cook each tortilla for about 1-2 minutes on each side until lightly golden and pliable. Set aside.
  2. Prepare the Filling:
    1. In a skillet, heat the olive oil over medium heat. Add the ground beef or turkey and cook until browned, breaking it apart with a spoon.
    2. Drain excess fat if necessary, then add the taco seasoning. Stir to combine and cook for another 1-2 minutes. Set aside.
  3. Assemble the Crunch Wraps:
    1. Lay one tortilla on a flat surface. Spread a layer of sour cream in the center, leaving some space around the edges.
    2. Add a layer of cooked ground meat on top of the sour cream.
    3. Place a second tortilla on top of the meat, pressing down gently.
    4. On this second tortilla, add a layer of shredded lettuce, diced tomatoes, and shredded cheddar cheese.
    5. Add a dollop of guacamole and salsa if using.
    6. Fold the edges of the bottom tortilla up and over the filling, pleating as you go to form a circular wrap. Secure with toothpicks if needed.
  4. Cook the Crunch Wraps:
    1. Heat a non-stick skillet over medium heat. Place the assembled Crunch Wrap seam-side down and cook for about 2-3 minutes until golden brown and crispy.
    2. Carefully flip and cook the other side for another 2-3 minutes. You can use a spatula to press down slightly to ensure even browning.
  5. Serve:
    • Remove the toothpicks, if used. Cut in half and serve with extra sour cream, guacamole, or salsa on the side.
