KETO BLUEBERRY LEMON SCONES (GLUTEN-FREE)

Ingredients:

For the Scones:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated erythritol or your preferred keto-friendly sweetener
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2 large eggs
  • 1/4 cup unsweetened almond milk (or any other low-carb milk)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries (if using frozen, do not thaw)

For the Lemon Glaze (optional):

  • 1/4 cup powdered erythritol or your preferred keto-friendly powdered sweetener
  • 1 tablespoon lemon juice
  • 1 tablespoon unsweetened almond milk (or more as needed to reach desired consistency)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Prepare the Scone Dough:
    • In a large mixing bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, and salt.
    • Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • In a separate bowl, whisk together the eggs, almond milk, and vanilla extract.
    • Add the wet ingredients to the dry ingredients and mix until combined. Gently fold in the blueberries.
  3. Shape the Scones:
    • Turn the dough out onto a lightly floured surface (using almond flour) and gently shape it into a 1-inch thick disc.
    • Cut the disc into 8 wedges or use a round cutter to make scones if preferred.
    • Place the scones onto the prepared baking sheet, spacing them a bit apart.
  4. Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.
  5. Make the Lemon Glaze (Optional):
    • While the scones are cooling, whisk together the powdered erythritol, lemon juice, and almond milk in a small bowl until smooth.
    • Adjust the almond milk to reach your desired consistency.
  6. Finish and Serve:
    • Once the scones have cooled slightly, drizzle the lemon glaze over them if desired.
    • Serve warm or at room temperature. Enjoy!
