KETO BLUEBERRY LEMON SCONES (GLUTEN-FREE)
Ingredients:
For the Scones:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup granulated erythritol or your preferred keto-friendly sweetener
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 2 large eggs
- 1/4 cup unsweetened almond milk (or any other low-carb milk)
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries (if using frozen, do not thaw)
For the Lemon Glaze (optional):
- 1/4 cup powdered erythritol or your preferred keto-friendly powdered sweetener
- 1 tablespoon lemon juice
- 1 tablespoon unsweetened almond milk (or more as needed to reach desired consistency)

Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Prepare the Scone Dough:
- In a large mixing bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, and salt.
- Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the eggs, almond milk, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until combined. Gently fold in the blueberries.
- Shape the Scones:
- Turn the dough out onto a lightly floured surface (using almond flour) and gently shape it into a 1-inch thick disc.
- Cut the disc into 8 wedges or use a round cutter to make scones if preferred.
- Place the scones onto the prepared baking sheet, spacing them a bit apart.
- Bake:
- Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.
- Make the Lemon Glaze (Optional):
- While the scones are cooling, whisk together the powdered erythritol, lemon juice, and almond milk in a small bowl until smooth.
- Adjust the almond milk to reach your desired consistency.
- Finish and Serve:
- Once the scones have cooled slightly, drizzle the lemon glaze over them if desired.
