Keto Cream Cheese Blintz

Ingredients:

For the Batter:

  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 2 large eggs
  • 1/2 cup unsweetened almond milk (or any low-carb milk alternative)
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • A pinch of salt

For the Filling:

  • 8 oz (225g) cream cheese, softened
  • 1/4 cup granulated erythritol or your preferred keto sweetener
  • 1 large egg
  • 1/2 teaspoon vanilla extract

For Cooking:

  • Butter or coconut oil for greasing the pan

Instructions:

  1. Prepare the Filling:
    • In a medium bowl, combine the softened cream cheese, erythritol, egg, and vanilla extract. Mix until smooth and well-combined. Set aside.
  2. Prepare the Batter:
    • In a large bowl, whisk together the almond flour, coconut flour, eggs, almond milk, melted butter, vanilla extract, baking powder, and salt until smooth.
  3. Cook the Blintzes:
    • Heat a non-stick skillet or crepe pan over medium-low heat and lightly grease it with butter or coconut oil.
    • Pour about 1/4 cup of the batter into the pan and swirl to spread it out into a thin, even layer.
    • Cook for about 1-2 minutes, or until the edges start to lift and the bottom is golden brown. Flip and cook for an additional 1 minute. Remove from the pan and repeat with the remaining batter, greasing the pan as needed.
  4. Assemble the Blintzes:
    • Place a cooked blintz on a flat surface. Spoon a couple of tablespoons of the cream cheese filling onto the center.
    • Fold the sides of the blintz over the filling, then roll it up tightly. Repeat with the remaining blintzes and filling.
  5. Optional Step – Finish Cooking:
    • If you like, you can give the filled blintzes a quick finish in the skillet. Heat a bit of butter in the pan and cook each blintz seam-side down for 1-2 minutes to make them golden and crispy.
  6. Serve:
    • Serve the blintzes warm. They’re great on their own or with a dollop of sour cream or fresh berries (be mindful of the carb content of any additional toppings).
